Cacik
Cool Turkish yogurt with cucumber, garlic and mint, thinned with a little water. Served as a meze, a side or a chilled soup, and looser than a thick tzatziki dip.
10 min · Serves 4

Method
Whisk the yogurt with the cold water until it is loose and creamy.
Stir in the cucumber, garlic, mint, the dill if you are using it, and a pinch of salt. Taste and adjust.
Chill for 20 minutes to let the flavors mingle.
Serve in bowls with a swirl of olive oil, as a side, a meze or a cool starter. Add a little more cold water if it has thickened.
From the kitchen
Contains milk. Cacik is usually looser than Greek-style tzatziki, which is a thick dip, and is often served as a cold soup or with meze. Households differ: some use only mint, some add dill, and the cucumber may be diced or grated. Add less water for a thicker dip, more for a refreshing summer soup.
