MAKE SOMETHING DELICIOUS

Method

  1. Stir the salt into the yogurt.

  2. Line a sieve with cheesecloth over a bowl, spoon in the yogurt, and fold the cloth over the top.

  3. Strain in the fridge for 12–24 hours until thick and spreadable.

  4. Swirl onto a plate, drizzle with olive oil and sprinkle with za'atar, pomegranate and mint.

  5. Serve with warm flatbread.

From the kitchen

Contains milk. Za'atar blends often include sesame, and flatbread usually contains wheat (gluten), so check the labels. Hands-on time is short. The straining happens in the fridge overnight.
